Carlos Amaya - Honduras
Our latest offering from Honduras comes from Carlos Amaya, a producer in the La Paz region whose farm, Las Huertas, sits at 1,600–1,700 meters above sea level. This coffee brings together Bourbon and Catuai varieties, processed through an extended 60-hour natural fermentation that develops remarkable sweetness and complexity.
We're excited to continue sharing coffees from the producers we source through Cima Café. Each lot offers a different expression of Honduras, and Carlos's coffee is a particularly lovely one. The extended natural process brings a beautiful depth to the cup, balancing rich chocolate sweetness with notes of ripe strawberry and delicate lavender.
A vibrant yet comforting cup, with plenty of sweetness and a floral finish. We're delighted to share Carlos's work with you.
